  1. We have a bunch, too. Make pepper jelly. My husband uses 15 Thai chilis for a medium hot 12-jar batch and 30 for a super hot batch. I think you can use about any pepper you’d like. Just keep the kids out of the kitchen while you’re chopping them all. The spice fills the room and eyes begin to water and burn. It’s yummy with crackers and cream cheese and makes great gifts.
